Homemade pesto & Super Hero Omega 3 fish oil

‘I generally like to give my children their Omega 3 oil straight from the fridge because that way I can ensure it’s fresh and offers maximum benefit. I appreciate however that not every child will greedily devour fish oil neat. This is when you’ll need to hide your Super Hero oil in something like porridge or a dish that has some kind of sauce like Bolognese or pesto.’ Mary van der Westhuizen, Nutritional Therapist.

Today we tried out this super quick and easy recipe by  Mary van der Westhuizen for Bare Biology.  Mary Van Der Westhuizen is a nutritional therapist who is passionate about the benefits of nutritious food for everyone. She sees clients from a clinic in Clapham where she lives with her husband and four young children, who all start their day with a drop of Super Hero!

Recipe (this pesto keeps for 3-4 days in the fridge and can be frozen)

Blitz the following in a food processor:

  • 50g pine nuts (you can substitute pine nuts with pistachios)
  • 50g grated parmesan
  • big handful of basil (you can substitute the basil in whole or part for lightly steamed spinach, kale or peas
  • 1 crushed garlic clove
  • A few tablespoons of extra virgin olive oil (add at the end so you can stop when you get to your preferred consistency.)

‘The flavour of this pesto is so tasty that if you mix in your Super Hero oil at the end no one will ever know the difference!’

We used our pesto on top of English muffins but here are some other ways to use pesto:

–       Add to cheese or chicken sandwiches for a tasty picnic or easy children’s lunch box

–       Spread on an oatcake for a satisfying snack

–       Decorate hummus with a spoonful of pesto to give your dip a colourful lift

–       Blend into homemade cheese muffins, bread or frittata

–       Dollop on top of homemade pizza

–       Stir into pasta or gnocchi

–       Top a fillet of salmon with pesto before roasting for a quick supper
